Pikachu Used to Be Round
Put the 1996 sprite next to the modern one. The mascot has been quietly slimming down for thirty years.
The Pikachu on a lunchbox today is a lean, upright creature with a small head and long limbs. The Pikachu that shipped in 1996 was a sphere with ears. This is not nostalgia playing tricks — the sprites are still there, and the change is dramatic once you put them side by side.
What actually changed
The original design is built out of circles. The body is close to round, the cheeks are wide and low, the limbs are short and stubby, and the tail is thick relative to everything else. It reads as a small rodent that has eaten well.
The modern one has been stretched vertically. The torso is longer and narrower, the face is smaller against the body, the ears sit higher, and the limbs have real length to them. It reads as something that can run.
Why a mascot gets redrawn
Round is good for a character that is going to sit still — on a card, on a box, in a small sprite on a monochrome screen. It is legible at tiny sizes and it reads as cute immediately, which is what a 1996 Game Boy sprite needed to do in about forty pixels.
Long is good for a character that has to move. Once Pikachu was carrying an animated series, running, jumping, being posed in a hundred pieces of merchandise a year and eventually appearing in 3D, the round design stops working. A sphere has no obvious joints and nothing to animate; a body with limbs does.
So the change is not a studio deciding the old one was wrong. It is a design being pulled toward the jobs it ended up doing, which were not the jobs it was drawn for.
The dex never noticed

The text has stayed remarkably stable while the picture moved. Pikachu has been 0.4 metres and 6.0 kilograms since 1996 and remains so — which is quietly the funniest part of the whole thing, because the weight never changed while the shape changed completely.
Whatever slimming happened was cosmetic in the strictest sense. On the official record, this is the same 6kg animal it always was. It just stopped being drawn like it.
